I know, I know. "Don't you already have a blog?" you might ask. Well, I started this new blog because I found my old one becoming more and more about the new dishes I was trying out since I became vegan. I want to focus on 'Southern Cuisine', because, for one, I find it to be somewhat more challenging to alter than say, Indian, and--heck, that's the food I grew up on and miss.
Tonight was the Super Bowl, and while I was not watching it, my husband, whose diet has been essentially highjacked by mine, was. I had some sweet potatoes that needed to be cooked asap, and I had some BBq sauce left over from making an awesome burger I found on the Voracious Vegan. I decided to make some BBQ sweet potato wedges. EASY.
(I didn't get any pictures, but I am going to get on that from now on.)
Preheat oven 350 degrees
Wash potatoes, cut into wedges.
Lightly coat in olive oil place on baking sheet
Sprinkle sea salt, pepper, granulated garlic over wedges
Bake until tender
Remove from oven, brush BBQ sauce over wedges, place back in oven for about 5 min. (or until sauce thickens)
Serve with Tofutti sour cream and fresh chives! Yum!!
